2 cups (8 oz) shredded white cheddar (sharp, not mild—flavor matters!)
½ cup (2 oz) grated parmesan (freshly grated—no green can!)
½ cup (2 oz) shredded mozzarella (low-moisture for best melt)
Additional ½ cup grated parmesan for topping
