Hearty Crock Pot Cowboy Soup (Hamburger Soup)
What makes it “cowboy”
Ground beef, beans, potatoes, veggies, big flavor, and zero fuss. Dump, slow-cook, eat twice.
Ingredients (Serves 6–8)
Meat
2 lbs ground beef (80/20 for flavor)
1 onion, diced
3 cloves garlic, minced
Veggies
3 carrots, sliced
3 celery stalks, sliced
3 medium potatoes, diced
1 bell pepper, diced
1 cup frozen corn
1 cup frozen peas (optional but classic)
Beans & Tomatoes
1 can (15 oz) kidney beans, drained & rinsed
1 can (15 oz) pinto beans, drained & rinsed
1 can (15 oz) diced tomatoes
1 can (10 oz) Rotel (tomatoes w/ green chiles)
Broth & Seasoning
4 cups beef broth
